Hi Frank, ? ? At first I was thinking this too. Pretty much the same over and over. Then I realized that using the basics you can be creative and prepare delicious meals. It takes some trail and error. However stick with it as this is the diet for the long haul to greater health and wellness. I am making small quantities of soups- lentil, potato, pumpkin, carrot; and wild rice with black beans; buckwheat salad; quinoa salad; tabouli salad with quinoa; buckwheat muffins without egg or leavening. ? ? Maybe there are others on this list who want to share recipes that they have come up with using Joanna's recommended foods. ? ? I would love to hear from others about how they are incorporating buckwheat into the daily plan. I make it as a cereal, as a salad, and as muffins.? ? ? Hi Frank, ? ? Here are a few recipes to get you started. All recipes are for 2 people. Buckwheat Cereal 1 cup water 1/3 cup buckwheat cereal (dry)? We use Bob¡¯s Red Mill brand Bring water to boil. Add the dry buckwheat cereal. Stir and boil for 1 minute. Then cover and turn off heat. The cereal will absorb the water in about 10 minutes.? Meanwhile, grate one oz. of ginger root. Finely chop 1/4 cup organic walnuts. Measure out 1/2 cup of applesauce.? Optional addition: 1/4 organic cranberries, finely chopped.? When the cereal has absorbed the water heat it again slightly for a minute. Then add in the ginger, walnut, applesauce, and cranberries and serve. To the standard Budwig Protocol,? alternate pineapple, strawberry, honeydew melon, blueberry, banana. Remember you can mix in a bit of organic raw honey while you eat the FO Cream. Sweet Potato Soup 1 Sweet potato, in cubes or slices 1 cup of water to start Boil water. Add in sweet potato, oregano, finely chopped garlic. Turn down heat (very low) and simmer the potato for 15 minutes. Check to see if it has softened. May need more water. Cook 5 minutes more if needed. Use a potato masher and mash to give the soup a creamy quality.? Sprinkle a 1/4 teaspoon of cinnamon. Top with cilantro. Variation#1 : Add in carrot, leek, or fennel. Variation #2: Use some fingerling potato (the red or purple ones) with the sweet potato. Add in 1/2 teaspoon cumin. Top with one or two oz.grated raw sharp cheddar Black Beans and Wild Rice (A Complete Protein) Purchase dry black beans in health food store. I get mine from the bins at Sprouts Market. They are very reasonable! Soak the 1/4 cup beans in 1 cup of water for 8 hours. Or heat the water, add in the beans, bring back to a boil. Turn off heat and soak for one hour.? Then rinse the beans in a fine mesh colander.? Return to pot and add another cup of water. Cook on low heat for about an hour. Check in on them and if they need more water, add from time to time. Wild and Long Grain Brown Rice 1/2 cup rice mixture 1 cup water Boil water. Add in rice. Cook on low heat for 45 minutes. Mix the cooked black beans above into the rice.? Variation #1: Add in some sweet potato, cauliflower. Just cut up in fine pieces. Add in when the rice is half way cooked. Variation #2: Add in chopped broccoli, grated ginger, sesame seed, red pepper when rice mixture is half way cooked. Variation #3: Add in walnut and pomegranate seeds at the end of cooking. Buckwheat Salad Lightly cook 1/4 cup whole buckwheat groats in pan- no oil. Just two to three minutes. Then add in 1 cup water. Cook on very low for 20 minutes. You may choose to add in a bit of applesauce to flavor. Add in your choice of leafy greens, walnuts or pistachios, cranberries or pomegranate, finely sliced carrot, radish, raw zucchini, cucumber. The recipe looks great! I already have some buckwheat and buckwheat flour and frozen cranberries. Going to make some this morning ! I have made progress with my CLL bringing my platelet count up from 3,000 to 23,000.? Long way from 140,000 but never-the-less, progress? and my hematologist is encouraging me to keep working at it !!? I have fixed a couple recipes using raw honey.? I bought a Paleo sugar-free cook? book and it is amazing what can be made WITHOUT cane or beet sugar.? I've switched applesauce and bananas for eggs.? The book is Paleo Sweets by Kelsey Ale. Anyone have any comments about using coconut sugar?? Is it compatible with the Budwig diet?? I have bought some but not yet used it . Both will result in softened beans, reducing the cooking time needed.? Only the first one (NO heat, long soak) will allow the phytase enzymes to be released to work resulting in the release of minerals from the phytate proteins.? Important. Both the long, whole grain rice and the wild rice should also be soaked and drained before cooking. And I suppose also the buckwheat groats (though in that case, heating them in a pan before adding water would be problematic?). By the way, it is important NOT to use the soaking water for cooking.? My feeling is that we get enough of those phytates from fresh vegetables, so we need not worry about getting them from NOT soaking grains and so on.? But that might be an arguable point. Interesting conversation on buckwheat. I use this instead of rice now and really only discovered it after I got my cancer. All my life my mother drilled into my head the importance of rinsing and then soaking grains and she would chide me severely for taking shortcuts on it. But buckwheat is quite low in phytic acid comparatively to grains and rices. I have been soaking it guilt free for 1-2 hours max:)

Nice recipes. I like your use of grated ginger in these recipes. I have never really gotten used to using it much although I throw it into my green juices. When I was in Germany, the community's bakery always mill the grains and seeds right before they start to make bread. They believe nutrition will lose if the material is milled for quite a while.
