I am really delighted to hear that buckwheat in?these muffins, and in the other foods that you have described, are helping your husband to overcome cachexia.? This is a serious issue, without many solutions.? So this one is very helpful.

Questions:

cooked buckwheat cereal = whole buckwheat "groats" (grains)? ?Before using them, do you soak these to release the phytates??

I suppose that YOU cook them?? How much water?? Do ?you use it as a gruel/porridge, or are they separate grains (no extra water)? ?Wait, I just saw your other post in which you mention?Bob¡¯s Red Mill brand?Buckwheat Cereal ?(1 cup water,?1/3 cup buckwheat cereal (dry)).? For those of us without access to Bob's Red Mill brand, What is the difference between this cereal and buckwheat groats?



buckwheat flour = do you grind the buckwheat yourself or purchase the flour?? Have you thought about soaking the flour in the water from the cooked buckwheat before baking?


applesauce, no sugar = do you prepare the apple sauce yourself? ?with or without the peel?


banana, mashed = no questions!


organic walnuts = do you soak these, and perhaps dehydrate them, before using them in the muffins?


cup cranberries = are these FRESH cranberries, or dried, sometimes called craisins ?? Note that often, dried cranberries are?

sweetened - though sometimes you can get them sweetened with concentrated apple juice rather than with straight sugar.


cup sesame seed = whole sesame seeds? ?toasted or not?

? They are a hit at our house. Please note... no egg, no baking powder, no baking soda, no salt, no oil. The applesauce provides enough liquid and the seeds/nuts provide enough "oil".

? ? At first I was thinking this too. Pretty much the same over and over. Then I realized that using the basics you can be creative and prepare delicious meals. It takes some trail and error. However stick with it as this is the diet for the long haul to greater health and wellness.
