For the past 3 days, members have reported that all the email
addresses on each post are being included on the
messages/notifications they receive from our group.

I can think of three things they might be concerned about:

1) The From address of the posting member, in the From field.
2) The From address of members quoted in the message body.
3) Their own address in the message footer.

How do we stop this from happening as soon as possible as members are
concerned about their information being released.

You can't.

(1) and (2) are in the nature of an email list. To and From addresses are always explicitly known to sender and recipient.

(3) is harmless - it only shows them their own address.
