Notes is *very* flexible. Text, images, tables, just?add what you want. This is for 10.15 but I don't think it's changed much recently. <>
You can also password-protect notes.

I use Notes daily. It syncs/shares with other Macs/iPhones/iPads and with other computer users. .
It has bold, underline, italic, title, header, subtitle, body text, bullet and number and checklists.
I keep shopping lists, prescriptions, vaccinations? and inoculations (like flu shots), household items and personal items I have to re-order, author and book lists.? Computer info. Even lists of lightbulb types.
I attached a copy of my Notes item for a book series by James S. A. Corey now also a TV series
