Plain text applies to the message itself. However if the sender doesn't
actually send in plain text, the system has to do the conversion itself.
In this particular case, there was a plain text part as well as a HTML part
(see the Content-Type and the headers of each part in the original message
[1]), so it doesn't seem like conversions are at play here. My expectation
was that the text/plain part would have been used & stored and that the
text/html part would have been dropped.

For now, I've enabled Normalize HTML Emails and will continue to monitor the
situation. If the group stills get messages with unwanted HTML in them, I'll
ask support for help. Though, in the new year...
