Sauerkraut juice is from lactofermentation, I believe this is the one that is recommended. Check properly and health food store have this one to sell.

In addition to the salt (which I believe is best avoided), I belive
it's important that it be fermented w/lactic acid rather than
w/vinegar. I believe most store-bought sauerkraut is the latter. It
may be best to buy your own.
I heard of but have never seen Eden brand lactic acid fermented carrot
Juice; perhaps they make other fermented products.
