You probably ordered single encoder boards first time, which look like:
?
And double encoder boards the second time¡ which look like this:
It has an extra row of pins on top to connect the second encoder (there is an inside shaft and an outside sleave on the encoder).? It is equivalent to using two of the above boards¡ So each dual encoder board takes one cable and fills out both encoders that would otherwise be two single boards/ encoders per cable.

Hi Bill,
In the boards that I have received, I noticed that there are 2 different encoder boards. In my first order I received the skinnier board labeled 3428224AP11-230315. In a recent order I received only 2 of the wider board, labeled 3428224A_P56_250122. What is the new board for and why only 2? Sorry if this was already answered, but I couldn't find it mentioned in my search here.
