I have always wondered why they were unsubscribed in the first
place if they were just going to be resubscribed automatically.
Resubscribing is not automatic. The (former) member is sent an email letting them know what happened. That email contains a link for them to resume their subscription. When they click that link then they are resubscribed.
Is this a groups.io setting/feature?
It is something Groups.io does (based on a report from the member's email service), there is no setting or option relating to it.

visualizing the actual course of events that happen.
I don't know why you would see it as instantaneous. I would expect that the notice to the (former) member and the notice to you about their unsubscription are sent at the same time. But one might expect some minutes to elapse for the member to receive and respond to the notice, which must happen before you are sent a notice of their resubscription.
