Ah, so you mean via Gmail or equivalent—interesting. I wonder if those environments deliberately override the table width. I know that most Android clients don’t scroll tables left/right in email; our corporate communications insists on sending announcements as tables, even though I’ve told them “I’m not going to scroll left-right to read this one my phone, and you’re presumably trying to communicate, so stop it”. iPhone mail does reflow tables. So there’s something interesting going on there. I’m not an HTML maven (and have no desire to be one), so have not investigated further.
