First, we didn't seem to be able to invite people to our group, and
now it tells us our group hasn't been approved yet.

Those are tied together, you can't issue invitations until the group has been approved.

How long will this take? We thought we had done everything to create
the group last week...

Normally group approvals take only a few hours. But that may not include weekends or holidays.
