Chats remain until they're deleted.? We've got a test chat that's been open since October of last year, right after chats were implemented.? You can also close a chat, but not delete it.? You can scroll back to see anything that's been posted.

There's not a direct search function, but I used the search in my browser and could find words included in the chat.
