As I understand it, when a member is transferred from Yahoo and the
member is already a member of the new group, their settings are not
changed. But what happens to messages associated with that member,
which I assume is keyed on the email address? ...
So after the transfer will Joe have 110 messages?
Correct, 110. The copied messages are also attributed to the already-present member.

Also, do I understand correctly that messages who's author is no
longer in the Yahoo group will be assigned to whoever initiated the
transfer?
No. That is said to be the case for uploaded content (files, photos, etc.). Messages for no-longer-present addresses show the person's Display Name in the messages list, and that plus the email address when you open the message. But they end up attributed to no one; that is, they have no "All Posts By This Member" function.

Which, come to think on it, is a little rude. It means that there's no systematic way to find them all until and unless Groups.io implements the ability to search messages based on the From address. Maybe they should have an "All Posts By This Non (or Former) Member" function.

I searched for answers to both these questions, but could not find
anything. If you can point me to any documentation on this it would
be helpful.
I haven't seen any. Most of what's known authoritatively is from posts by Mark in beta. My answers above are from observations made in one of my groups that transferred from Yahoo.
