Jennifer,
Go to any good wine store, and get from them a simple kit for prolonging the life of wine and champagne.
It is a kit with a little pump and 2 special plastic corks that create vacuum in the bottle, and thus the preservation for longer time.
It is inexpensive.

I haven't tried the red wine or `champagne part of the diet yet and
wondered - doesn't the red wine go bad and the champagne go flat after
being opened for as long as it takes to drink it? I am alone so it
would last me quite a while.
