You are so correct when you say that the fo/cc mixing is of the utmost importance. After all, this is what the Budwig protocol is all about. I truly feel that you have now mastered the basic skills of the Budwig protocol if your mixture looks the way you have described it here. We have several lactose intolerant people in our group. I personally tested both cc and kefir and I agree with you - there is no difference between cc and kefir as far as water solubility is concerned. I find that kefir cottage cheese is actually easier to mix with the oil than ordinary store bought cottage cheese. Also, I found that for those people who gag when they first taste the fo/cc, the kefir seems not to have that effect on them (can you believe that some people feel that way about this mix?) While I was typing your reply your orange juice question came through and I have personally not tried plain orange juice. It shouldn't be a problem as my personal absolute favorite fruit shake is a blend of juiced tropical fruits such as papaya, pineapple, banana mixed with orange juice, diluted with filtered water and then blended with the fo/cc mixture - simply the best, as long as there is no oil floating on the surface!! When I mix the oil with my kefir there is no more residue of oil than if I mix it with CC. This residue can only be seen with a magnifing glass. With the magnifing glass there are no yellow beads, it is a cream colored glistening. Possiblly smaller that the head of a needle. With the naked eye it totally looks like cream and will stay looking that way, even if I put it into the fridge for a few hours. Everybody seems to have missed my post, I think, a few days ago, when I used Nancy's low fat CC. I saw the same residue, then, as I see when mixing using kefir! If it were not water soluable then it would separate after it sits and I would be able to see real oil instead of only glistening, I think. After my experiment, (mixing with a hand-mixer and using CC and seeing the same glistening as I see with my kefir) I am inclined to believe that my kefir mix is indeed water-soluable! I guess the discussion goes back to just how you mix and how long...whisk, elec hand mixer or blender. Then ask yourself this question: "does it separate after sitting and do I see the yellow oil".
