Hi Jackie, the important part is to remember, your kefir or cottage cheese needs to have 10g of protein. If you are going with Kefir than you need to drain the liquid and the left over will be a cheese texture ready to use.

Can I just buy organic 1% kefir, drain it and use that as kefir cottage cheese?

Hi to you I also use kefir for along time now since I can't find organic quark or cottage cheese, we buy organic grass feed cow milk all full cream in the fridge the cream separates from the milk them we add the kefir grains for 24 hours and do the process mentioned by Shalmom Jean, me too I think is better than quark or cc more easy to mix, note this help.

Kefir grains cannot replace quark or cottage cheese, but they can be used to make quark.

First, you place the Kefir grains in cow's or goat's milk to create Kefir.? Then you must DRAIN the kefir to remove most of the whey (about 65% by volume, I think - not sure).? You can do that by draining the kefir in CHEESECLOTH.? What remains in the cloth will be "kefir cheese", which will be about 10% protein.? That will be perfect in place of quark or cottage cheese (in my mind better...).
