You would do this by changing the format of the power supply. Hover over the section that contains the transformer (but not the transformer or rectifier themselves) and when it turns yellow, right click with the mouse:

Select the Change option and you'll get a list of different formats that can be selected:

The one you want is Full wave, pick solid state or vacuum tube to get the symbol you need. This will also affect the list rectifiers that you can choose from, so for example, it wouldn't show 1N4007 in the list if you've chosen a vacuum tube rectifier symbol.

The rest is the same as before, right click on the transformer to set the voltage bearing in mind that it's a single winding voltage so for 300-0-300 you would pick 300, not 600. Actually the off load voltage will be higher, but you can figure this all out with the two calculators that are built in. Once you right-click on the transformer, you'll get the following screen:

The two buttons allow you to set the transformer parameters using either:
?
- The transformer nominal voltage, nominal current and % regulation figures
- The measured off load voltages on the transformer and a set of resistance measurements

The following is an example if your transformer is 300-0-300 with an output of 100mA and 10% regulation:

Notice the offload voltage is 330-0-330 and the source impedance will be around 300 ohms. Click OK a couple of times and the parameters will be entered into the circuit. Right click on the rectifier and it will bring up some different ones you can use.
