P.S.? There's a reason I beg people to read the entirety of a topic, no matter what group we're talking about, before posting anything else.? I can't count the number of times something's asked that's already been answered, and it's asked because the questioner jumped on the first post they read in a given topic/email thread before making their way through to the last one.

End quote: Well, at our set up, I go get the tubs from the waitress station; (many over 50-60 pounds); Then I throw all the garbage away, Spray off each dish, Put it in the middle sink to wash by hand, Load a rack, Then run them through the sanitizer machine, Then unload the rack and put all of them away. Then start the cycle all over again. I handle many hundreds of pieces of dishes daily. ? I have heard of many dishwashing systems where there is a conveyor belt and the dishwasher manages the belt, but, We have nothing sophisticated. We get to do it the old fashioned way. ? ?
